A 15 lb unstuffed turkey needs roughly 3 h 15 min – 3 h 45 min at 325 °F. It is done when a thermometer reads 165 °F (74 °C) in the thickest part, not when the timer goes off.

Step-by-step solution

  1. Shortest time: multiply the weight by 13 minutes per pound, the low end for a unstuffed turkey at 325 °F

    15 lb×13 min/lb=195 min
  2. Longest time: multiply the weight by 15 minutes per pound, the high end of the range

    15 lb×15 min/lb=225 min
  3. Round both times to the nearest 5 minutes and show them in hours, which is easier to plan with

    3 h 15 min – 3 h 45 min
  4. Fridge thawing, quick end: divide by 5, because a turkey thaws about 4–5 lb per day in the fridge

    15 lb5 lb/day=3 days
  5. Fridge thawing, slow end: divide by 4 lb per day instead

    15 lb4 lb/day=3.75 days
  6. Cold-water thawing: multiply by about 30 minutes per pound, changing the water every 30 minutes

    15 lb×30 min/lb=450 min

What this calculator does

Find out how long your turkey needs to thaw and roast, so you can plan the big meal with confidence. A whole turkey is the largest thing most people ever cook at home. The timing has to be planned days ahead. First comes the thaw, then several hours of roasting, then a rest before carving. Enter the bird's weight, and the calculator gives you a roasting window at 325 °F. It uses the usual minutes-per-pound guidelines. It also estimates thawing time in the refrigerator and in cold water.

Time is only a planning tool. Ovens run hot or cool, and birds differ in shape. A turkey that went in partly frozen takes longer, too. A turkey is safely cooked when a food thermometer reads 165 °F (74 °C) in three places. Check the thickest part of the breast, the innermost part of the thigh and the wing joint. If the bird is stuffed, check the center of the stuffing as well. Start checking before the shortest time shown, and go by the thermometer, not the clock.

Where it's used

Why this math matters outside the classroom:

  • Roasting time. A 14 lb unstuffed turkey at about 15 minutes per pound needs roughly 210 minutes, which is 3 hours 30 minutes.
  • Fridge thawing. At about 24 hours per 4 lb in the fridge, a 16 lb turkey needs about 4 days to thaw.
  • Cold-water thawing. At about 30 minutes per pound, a 12 lb turkey thawing in cold water takes about 6 hours.
  • Holiday schedule. Hosts work backward from dinner time to decide when the bird goes in the oven, leaving time to rest before carving.
  • Checking doneness. Cooks confirm the thickest part of the turkey has reached 165 °F with a thermometer rather than relying on time alone.

How to use it

  1. Enter the turkey's weight in pounds or kilograms, using the weight on the label.
  2. Choose stuffed or unstuffed. A stuffed bird takes longer because the stuffing in the cavity has to reach a safe temperature too.
  3. Read the roasting window and the thawing estimates. Then plan backwards from the time you want to eat.
  4. Start checking with a food thermometer at the beginning of the window. The turkey is done at 165 °F (74 °C).

What the inputs mean

Turkey weight
The guideline ranges cover whole turkeys from about 4 to 30 lb (1.8 to 13.6 kg).
Stuffing
Many cooks bake stuffing in a separate dish. That lets the bird cook faster and more evenly. If you do stuff it, stuff it loosely just before roasting. Then check that the center of the stuffing also reaches 165 °F.

Formula and method

unstuffed roasting time ≈ weight (lb) × 13 to 15 minutes
stuffed roasting time ≈ weight (lb) × 15 to 17 minutes
refrigerator thawing ≈ weight (lb) ÷ 5 to weight (lb) ÷ 4 days
cold-water thawing ≈ weight (lb) × 30 minutes
1 kg = 2.20462 lb

Here, weight is the turkey's weight in pounds (lb). The roasting time multiplies it by the usual range of minutes per pound for an oven at 325 °F. The answer is rounded to the nearest five minutes. It's shown as a window, from shortest to longest, rather than one exact time. If you enter kilograms (kg), the calculator first changes them to pounds.

Thawing uses two common rules. In the refrigerator, allow about one day for every 4 to 5 pounds. In cold water, allow about 30 minutes per pound. The bird must stay under the water, and you change the water every half hour.

Worked example

You bought a 15 lb turkey and plan to roast it unstuffed at 325 °F.

  1. Shortest estimate: 15 × 13 = 195 minutes, or 3 h 15 min.
  2. Longest estimate: 15 × 15 = 225 minutes, or 3 h 45 min.
  3. Refrigerator thawing: 15 ÷ 5 = 3 days to 15 ÷ 4 = 3.75 days. Cold water: 15 × 30 = 450 minutes, or 7.5 hours.

Result: Plan on roughly 3 h 15 min – 3 h 45 min in the oven, and about 3–3.8 days thawing in the fridge. Start checking with a thermometer around the 3-hour mark. It's done at 165 °F (74 °C) in the thickest part.

Understanding the result

Treat the window as a schedule, not a promise. Large birds often finish nearer the short end of the range. And a turkey that reaches 165 °F early is done early.

Let the roasted turkey rest for 20 to 30 minutes before carving, so the juices settle. Cover it loosely with foil to keep it warm.

Assumptions and limitations

  • The oven is preheated to 325 °F (163 °C) and the turkey is fully thawed before it goes in.
  • The turkey is a whole bird roasted in an open pan. It isn't a breast, turkey parts or a spatchcocked bird (one cut open and laid flat).
  • The refrigerator holds 40 °F (4 °C) or below.
  • Per-pound rates are rough, and they tend to overestimate the time for very large birds. Convection ovens (ovens with a fan), roasting bags, dark pans and opening the door often all change cooking time.
  • The estimate doesn't apply to frying, smoking, grilling, or cooking from frozen. Cooking from frozen takes about 50% longer.
  • Only a food thermometer can confirm the turkey is safe to eat. Pop-up timers and the color of the juices aren't reliable.

Frequently asked questions

How do I know when the turkey is done?

Use a food thermometer. The turkey is done when it reads at least 165 °F (74 °C) in the thickest part of the breast, the innermost part of the thigh and the wing joint. If it's stuffed, the center of the stuffing must reach that too. Keep the probe from touching bone.

How long does a turkey take to thaw in the refrigerator?

Allow about one day for every 4 to 5 pounds. A 20 lb bird needs 4 to 5 days. So it often has to go into the fridge the weekend before a Thursday dinner. Once thawed, it keeps another 1 to 2 days in the fridge.

Can I thaw a turkey faster?

Yes. Keep it in its leak-proof wrapping and sink it fully in cold tap water. Change the water every 30 minutes. Allow about 30 minutes per pound, then cook it right away. Never thaw a turkey at room temperature or in warm water.

Does stuffing really add time?

Yes. The stuffing sits in the center of the bird and heats slowly. It has to reach 165 °F as well. That's why stuffed estimates run about 2 minutes per pound longer.

Should I roast at a higher temperature to save time?

You can, but the breast tends to dry out before the thighs are done. These guidelines also no longer apply. If you change the temperature, rely on the thermometer from early on.

How this calculator is checked

Method: Conventional time-per-pound roasting guidelines at 325 °F (about 13–15 min/lb unstuffed, 15–17 min/lb stuffed) and common thawing rules (fridge about 24 h per 4–5 lb; cold water about 30 min per lb). Safe internal temperature of 165 °F (74 °C) for poultry. The calculation is covered by automated tests with known reference values and edge cases. Last updated 2026-10-18. Found a problem? Tell us.
