What this calculator does
Find out how long your frozen meat, poultry or seafood needs to thaw safely, so you can plan the meal. Most frozen foods have to thaw before cooking, and the safe ways take longer than people expect. Enter the weight, and the calculator gives a thawing time for two methods. These are the two that the USDA Food Safety and Inspection Service (FSIS) recommends for planning ahead. One is in the refrigerator. The other is sealed in a bag in cold water.
The refrigerator is the slowest and easiest method. It takes about a day for every 4 to 5 pounds, and even a 1 pound package needs a full day. Cold water is much faster, around 30 minutes per pound for a large item. But you need to change the water every 30 minutes, and cook the food as soon as it has thawed. Thawing on the counter or in hot water is never safe for perishable food. The outside warms into the bacterial danger zone of 40–140 °F while the center is still frozen.
Where it's used
Why this math matters outside the classroom:
- Holiday planning. A host thawing a 20 lb turkey at 1 day per 4 lb moves it to the refrigerator 5 days before the meal.
- Unit rates. Students use a rate of 30 minutes per pound to find that a 7 lb roast needs 210 minutes, or 3.5 hours, in cold water.
- Weeknight dinners. A cook moves a 2 lb pack of chicken thighs to the refrigerator the night before, since even small packs need about a day.
- Restaurant prep. Kitchen staff schedule refrigerator thawing for cases of frozen fish so they are ready for the next day's service.
- Food safety class. Students learn why food thawed in cold water must be cooked right away while refrigerator-thawed food can wait.

How to use it
- Choose the food. The type matters for how long it keeps after thawing. It also decides whether it counts as a small package or a large item in cold water.
- Enter the frozen weight in pounds or kilograms.
- Choose refrigerator or cold water thawing.
- Plan from the time shown, and check that the center has softened before cooking.
What the inputs mean
- Food
- Ground meat, poultry and seafood keep 1–2 days in the refrigerator after thawing there. Red meat roasts, steaks and chops keep 3–5 days.
- Weight (frozen)
- Use the weight on the package. Several small packages thaw faster than one block of the same total weight, so spread them out in the refrigerator.
- Thawing method
- Cold water means a leak-proof bag, fully under cold tap water, with the water changed every 30 minutes. If the bag leaks, the food can pick up bacteria and soak up water.
Formula and method
refrigerator: hours = weight (lb) ÷ 5 × 24 to weight (lb) ÷ 4 × 24, at least 24 hours cold water, large items (roasts, whole birds): minutes ≈ 30 × weight (lb) cold water, small packages: minutes ≈ 30 to 60 × weight (lb) water changes ≈ longest time ÷ 30 minutes
FSIS advises about 24 hours in the refrigerator for every 4 to 5 pounds. Even a small package needs at least a full day. The calculator works out both ends of that range and rounds to tenths of a day.
For cold water, FSIS gives about 30 minutes per pound for a whole turkey. A 1 pound package takes an hour or less, and a 3 to 4 pound package takes 2 to 3 hours. Large items use the 30-minute rate. Small packages use a range of 30 to 60 minutes per pound, which covers those package examples. Times are rounded up to the next 5 minutes.
Worked example
You're thawing a 12 lb frozen turkey.
- Refrigerator, faster end: 12 ÷ 5 × 24 = 57.6 hours, or 2.4 days.
- Refrigerator, slower end: 12 ÷ 4 × 24 = 72 hours, or 3 days.
- Cold water instead: 12 × 30 = 360 minutes, or 6 hours, with about 12 water changes.
Result: Allow 2.4 – 3 days in the refrigerator. Or allow about 6 hours in cold water, if you'll cook it straight afterwards.
Understanding the result
Start refrigerator thawing early. After it thaws, food can wait safely in the refrigerator for the times shown, so finishing a day early is fine.
If time runs out, it's safe to cook meat and poultry from frozen. It takes about half as long again as fully thawed food. A food thermometer confirms when it's done.
Assumptions and limitations
- The refrigerator holds 40 °F (4 °C) or below.
- Cold water thawing uses a sealed, leak-proof bag, fully under water, with the water changed every 30 minutes.
- The food is a single frozen piece or package of the weight entered.
- Times are estimates. A colder refrigerator, a thick block or a dense package takes longer.
- Microwave thawing isn't estimated, because it depends on the appliance. Food thawed in a microwave must be cooked right away.
- Stuffed or pre-stuffed frozen poultry should be cooked from frozen, following its package, not thawed.
Frequently asked questions
How long does it take to thaw meat in the refrigerator?
About a day for every 4 to 5 pounds, with a full day as the minimum. A 1 lb pack of ground beef needs about a day. A 10 lb roast needs 2 to 2.5 days.
Can I thaw meat on the counter?
No. Perishable food shouldn't sit at room temperature for more than two hours. While the center is still frozen, the surface warms into the 40–140 °F danger zone, where bacteria multiply quickly.
Can I refreeze thawed meat?
Food thawed in the refrigerator can be refrozen without cooking, though the quality may suffer. Food thawed in cold water or in the microwave should be cooked before you refreeze it.
Why change the water every 30 minutes?
The frozen food chills the water, and the room warms it. Changing it keeps the water cold, so the surface of the food stays out of the danger zone while it thaws.
How long does thawed chicken keep in the refrigerator?
Poultry, ground meat and seafood thawed in the refrigerator keep for 1 to 2 more days before cooking. Red meat roasts, steaks and chops keep 3 to 5 days.

How this calculator is checked
Method: USDA FSIS thawing guidance: refrigerator about 24 hours per 4–5 lb with a one-day minimum; cold water about 30 minutes per pound for whole turkeys, about 1 hour or less for 1 lb and 2–3 hours for 3–4 lb packages, changing the water every 30 minutes; storage after refrigerator thawing of 1–2 days (ground meat, poultry, seafood) or 3–5 days (red meat cuts). The calculation is covered by automated tests with known reference values and edge cases. Last updated 2026-10-18. Found a problem? Tell us.
